All Things Spring (and cooking with them)

Get inspired by everything nature has to offer in spring; fresh asparagus that have just reared their heads, an abundance of green herbs from the garden, wild garlic popping up everywhere and the freshest eggs just laid by the chickens living in the yard. The perfect time to bring all those fresh ingrediënts into the kitchen to cook up an exciting spring feast.
We are making a beautiful shaved spring salad with asparagus, radishes,rocket and chives, great as  a side dish or for lunch with a slice of crusty bread and a creamy, buttery aspargus and pea risotto. And with wild garlic in abundance we make a savoury dutch baby with wild garlic and eggs for brunch or a spring brunch of grilled asparagus, labneh and a soft boiled egg with smokey olive oil. The soufflés are super easy to make and packed fresh herbs.
And there is a spring potato salad,  with asparagus, eggs and green herbs and a creamy roasted chicken. Asparagus and potatoes are also used in a delicious soup and for a quick weeknight dinner there is a bean and wild spinach stew. And no spring without rhubarb, so for dessert there is a creamy yoghurt, rhubarb and honey mess.
