Winter Pastas

When the weather turns cold, there is nothing better than a plate of comforting, warm and hearty pasta. There’s a mix of true classics, done the proper way, and new or lesser-known recipes using the best seasonal ingredients. Some of them are super quick to make, others take a bit more time, but all are comforting and delicious.
There is traditional Ragù alla Bolognese which, properly made, is a meat sauce, not a tomato sauce, served with penne. Pasta with lentils and a really good glug of olive oil is almost a cross between a sauce and a thick soup, and incredibly comforting. Spaghetti all’ubriaco – drunken spaghetti – is a traditional Tuscan pasta dish cooked with wine and, no worries, all the alcohol cooks out of the sauce.
Pasta with Brussels sprouts, potatoes and a kale pesto is a winter variation on the traditional recipe of pasta with green beans, potatoes and pesto, using kale for the pesto and replacing the green beans with sprouts – and it is truly delicious. Penne with pumpkin is super easy to make, with minimal ingredients, and is true comfort food. There is a classic carbonara, which should never be made with cream. And last, but certainly not least, lazy lasagne with a creamy mushroom sauce – no layering, no effort, but super tasty.
